- 1999 Domaine Robert Chevillon Nuits St. Georges 1er Cru Les Chaignots - France, Burgundy, Côte de Nuits, Nuits St. Georges 1er Cru (6/5/2022)
Patience is a virtue. I don’t have much, but sometimes it happens. This is in a perfect spot to just drink it. It’s not the LSG or the Vaucrains, but it’s also a more elegant expression, even if it still has some of that Chevillon NSG austerity. Aromatics are all damp earth and dried flowers. The palate has red fruit, but it mostly asserts itself on the finish. After a couple of hours of air an touch of dried tobacco leaf creeps in to add another layer of complexity. Tannins are resolved, so it glides across the palate like Teflon. Perfect timing.
