WTN: Never Break the Chaignots

by David M. Bueker » Sun Jun 05, 2022 6:50 pm

  • 1999 Domaine Robert Chevillon Nuits St. Georges 1er Cru Les Chaignots - France, Burgundy, Côte de Nuits, Nuits St. Georges 1er Cru (6/5/2022)
Patience is a virtue. I don’t have much, but sometimes it happens. This is in a perfect spot to just drink it. It’s not the LSG or the Vaucrains, but it’s also a more elegant expression, even if it still has some of that Chevillon NSG austerity. Aromatics are all damp earth and dried flowers. The palate has red fruit, but it mostly asserts itself on the finish. After a couple of hours of air an touch of dried tobacco leaf creeps in to add another layer of complexity. Tannins are resolved, so it glides across the palate like Teflon. Perfect timing.

Congrats on the timing. Great title, and a fun read: I really really really love Chevillon.

Big Chevillon fan here as well. Wish I had bought a lot more back in the day when they only seemed expensive.

Another Chevillon fan here. And like David I wish I had bought more when they were merely expensive.

Me too,. For '99 I'm down to one Chaignots and 2 Roncieres. Reminder to self- with Chevillon, go deep.

I have two 1999 Vaucrains left. I started with six long ago, and ended up going through four too early, though two were corked.

Two out of six corked? That hurts.
