Popped and poured because I decided to open at the last minute, this was ready from the get go. Initially it had a degree of voluptuousness, but that calmed down after a whirlwind fifteen minutes. Then it settled into a groove, where the black fruit and roasted meat melded with a subtle spice and a bit of scorched pork fat. The texture was smooth, but not soft, more like a finely sanded piece of wood, with no flaws, but an underlying sense of a firm foundation. All this for a little more than $20. I could happily drink this every day, maybe taking a break for an Ode to Lulu Rosé once in a while.
