WTN: Dom Perignon 1996

Lockdown Wine #123. Might just be my last lockdown note. Though technically still under some sort of quarantine status, starting tonight, curfew is lifted and restrictions are already pretty relaxed. Virus numbers are on a steady and very encouraging downtrend, especially in Manila. We shall see.

Went out with the kids for some French food. I thought a special bottle would be appropriate as this is the first time we ate out as a family since March last year! Hence the Dom Perignon 1996. As always, a lovely champagne. Medium bodied, sourdough, cafe au lait, and nougat. Very vibrant. Maybe a young adult. Plenty of life in this. I wouldn't be surprised if this lasted another 15 years or so. No hurry to drink it up. Serve it just a degree warmer than ideal white wine temp to capture all the nuances. Outstanding.
Three be the things I shall never attain:
Envy, content, and sufficient champagne.

Such a fabulous year that was for Dom. Nice to hear the wines are holding up (mine are long gone). Congrats on the next step of life returning to normal.
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

As luck would have it, a guy in my tasting group brought a bottle of 1996 Dom last night. It was gorgeous
