What a difference a year (or just a bottle) makes. This bottle (again a 2013 disgorgement) was an absolute umami bomb, and could have been a great match with a slow-braised pork dish. As it was our aged Gouda gougeres were excellent. As usual we left a little for tonight, and the wine completely changed. Less intense, but also brighter, and I swear it smelled like french fries just out of the fryer. Mouthwatering!
Fascinating stuff.
