An orphan that I tripped over in the cellar--I somehow hadn't logged it into inventory and didn't realize I still had any 13's!--served it with a smoked trout pate:
2013 Domaine Christian Moreau Père et Fils Chablis 1er Cru Vaillon Chardonnay
A whiff of oxidation blows off quickly and one hour in with a good chill, this wine swung for the fences. Yellow quince-like fruit with lemon, homemade apple sauce, graham cracker and a touch of cinnamon wading around in the mineral pool, at eight years out this wine is spectacularly at peak, decadent in the most refined way possible.
