Some young wines benefit from the extra air. Many at least hold their own for a night or two.
90% of the time I prefer a wine the first night, but that still leaves a number of bottles that show better with the extended airing.

I agree broadly.
Formerly we had no difficulty in finishing a good bottle in a sitting but recently health reasons are restricting our consumption. I find that many half full bottles are still acceptable after two or tree days at fridge temperature. Unfortunately this would not apply to most of the 15+ year old bottles (fortified wines are an obvious exception) which make up much of my collection.

Older wines (which I am accumulating at a rate equal to time) are indeed an issue. I need more weekend days!
