Lockdown Wine #56. If you are familiar with the movie Babette's Feast, one of the iconic dishes from the film is Cailles en Sarcophage which is quails in puff pastry with foie gras and truffles. One of our favorite French restaurants is offering the dish which I ordered for dinner. In the movie, this was paired with a Clos Vougeot. I didn't have one on hand, but I had the next closest thing, a Chambolle-Musigny from Vogüé.
At first, very firm and tannic. Decanted for one hour to soften it. Youthful color. Just the slightest hint of brown on the rim. A bit of heat on the nose. Sweet herb, mint, oriental spice, wood. Not a lot of fruit on the nose. Bright, juicy, ripe sweet strawberry on the palate. Smoked meat, pepper. Still a bit chewy. Probably could have used another hour of air. Quite a bit of acid, but balanced by the fruit sweetness. Good length with sweetness all throughout. Very fine finish. Excellent Burg, but needs more time. Leave alone for 3 to 5 years at least.
