WTN: Champagne Florence Duchêne Bathala Rosé NV

Lockdown Wine # 55. Named after the chief god of the pre-Hispanic Filipinos. Apt, considering that Florence Duchêne is French Filipina. 45% Chardonnay, 43% Pinot Noir ( without skin contact), 4% Pinot Meunier (without skin contact), and 8% Pinot Noir from Cumières (with skin contact for color). Dosage 8g/Liter.

Quite dark salmon, some orange tinge. Strawberry/raspberry pastry on the nose. Medium-bodied. Strawberry and raspberry, lemon peel, white pepper, green apple skins. Quite dry, but I think good with a wide range of food. Robust enough to pair with bolognese sauce, and enough acidity to go head to head with a salad and mushroom and lemon pasta. Fair length. Finished half the bottle while cooking, and the other half with dinner!
Three be the things I shall never attain:
Envy, content, and sufficient champagne.
