Last night we had a 6 person zoom tasting, 6 bottles of 1975 Domaine de Chevalier rouge, distributed last week, everyone decanted about a half hour before the call. I had dinner first with family (pasta wirh ricotto, chickpeas, kale, and broccoli), but had some smoked duck and pate de campagne with the wine. My bottle had a little animal/brett note when first opened, but well within my tolerance level, amd seemed to fade away (or get lost as fruit opened up). Pretty classic Graves profile , redder fruit and cigarbox. The tobacco notes got fuller in time, and there was a pleasant ferric note. Pretty lovely wine, red and black cherries, slightly smoky, just a bit of tannin, good acdic balance, nice length. Nice way to start virtual tasting series. A-/B+
