WTN: Another 2000 Bordeaux

My first bottle from a mixed case so I should have 2 or 3 more, this 2000 Chateau Clos de Sarpe was disappointing in that , as Parker predicted, it was consumed too soon. I gave it 6 hrs. of decant time again in a wide-mouth jar and it still seemed young/overly tannic. There was herb on the nose and a bit of black fruit and herb on the palate but this black wine with purple edges was basically still too young to be enjoyed at anywhere near its full potential. I'll leave the other bottles for my niece/executor since I have no children. Next up is a 2000 Calor-Segur but I have my doubts there too.

What other 2000 Bordeaux do you have? Perhaps there is a more likely candidate for near term opening.

I bought quite a few 2001s. I should be opening them more often; I've just tended to find that the kind of food one would select for eating with Bordeaux is not what I'm interested in cooking.

Same issue here. Most of my food choices are Riesling, Pinot, Zin or GSM grape friendly.

Similar. Pinot and syrah mainly, interspersed with lots of white.

In answer to David's inquery, I have some 2001 Pichon and 2000 Pavie Decesse and 1999 Pavie but all at at my off-site cellar except one 1999 Pavie I am saving for MoCool which I hope we have this year in August. I may go down to Athens to retrieve some of those along with older cal. Cab. as I can do that without violating social distances with the owner of the house/basement/wine cellar. I do have six each of 2015 Monbousquet and Troplong Mondot here but they may be too young to drink now although cellar tracker gives some high scores to both with lots of aeration.
