According to my favorite sommelier (the wine guy at Costco), Chianti, especially the acidity, is meant for food, especially garlic. ]'m having a Chianti right now with home made Guac (fresh squeezed garlic) and Mary's Gone crackers. He's right. Chianti is not to be sipped on the sofa..Here's my guac recipe. 2 or 3 ripe avocados scooped into a bowl (or storage Tupp. or Rubbermaid contained. A fresh squeezed lemon, much Frank's red hot sauce, fresh squeezed garlic ( 2 cloves) and some soy sauce. Stir til less chunky, and, voila. Chianti will thank you for it. At least that's my take..

It's pretty standard guac, except no cilantro. I am ambivalent (bordering on dislike) about the stuff, and my wife despises it.

Oh hell have I forgotten cilantro in my guac. Must rectify that. A dollup of that guac in my salad as part of my dressing is wonderful. I used to put just straight avocado, hot mufallata,a balsamic vinegar and flame roasted chili lime salsa..

My guac has no Franks, cilantro or soy but lemon juice, diced tomatoes, a little diced onion and some medium hot salsa (Pace) to taste. Guac without a bite is just avocado mush.

I use cayenne pepper to add zip to my guacamole. Pace is crap salsa.
