Developing a vocabulary

by julian.kroin » Sun Feb 09, 2020 4:43 pm

I've been drinking wine since b4 Roman times,* but only in the last few year have I tried to develop a vocabulary of tasting notes. When I notice an interesting taste I look for my term in the vino vocab. I'm not often successful, but sometimes I find aligning terms, por ejemplo, I tasted 'cumin' in some cabs and realized others called it 'cedarwood.' That I could relate to. What I taste as 'licorice' I believe others describe as vanilla. Currently I'm drinking a 'Primitivo' Pillastro puglia 2016 and the first notable taste is something I've noticed only occasionally in red wines and tried 'jammy,' Nope! Not according to that description. To me it is obviously the taste/smell of concord grapes. I occasionally buy them in season and love them. Someone help me out here. Does anyone know what I'm talking about and can give me the 'correct' tasting term? And please hurry because I'm probably losing more tasting cells than I'm replacing. That goes for brain cellls as well. Although hope springs eternal, I have never tasted 'pencil shavings.' And I've never tasted blueberries in Harrar coffee (I've roasted).
* In my case I go back to Mateus rose and Almaden burgundy

Young red wines often have an obvious “grapey” note that I think you are referring to. It reminds me of red grape juice, which is often made with some Concord.

I taste monthly in a group, and one of the sharpest palates there is a guy who picks up cumin quite often. Is it an official tasting word? I don't think there's any such thing--we taste what we relate to. 'Jammy' is a term I use quite a bit, usually in reference to an overripeness that I associate with the flavor of strawberry jam vs. fresh strawberry. It's a cooked thing, though the wine wasn't neccessarily exposed to heat--that would be prunes.

David, before I read your post this morning, I realized I hadn't included 'grapey' in my first post. I've used that, at least in my mind. Thanks for the confirmation.
I occasionally taste prune/plum as well, but refrain from such a 'blasphemous' note until I read 'pencil shavings.'

Some folks like the word "mineral". I do but cannot really explain the connection. It just tastes"minerally!"

Plum is a fresh fruit, prune is dried or stewed. Not typically interchangeable.

Today that same Primitivo had no grapey flaver. I did aerate it yesterday by the 10 pour method. Taste may also depend, I've noticed, on what your tongue has been involved in before tasting. More alcohol and tannins today, though the tannins were there yesterday.

Julian,

What was the point of a Blade Runner clip. Yes, it’s a classic line, but it’s completely out of place in the context of this thread.

My context can seem out of context. It does take courage to click on a hyperlink though. Cheers
