A wee BloodyPulpit:
1. COS is a joint effort by Giambattista Cilia, Giusto Occhipinti, and Pinuccia Strano; focusing on the indigenous grapes of Sicily. This is a skin-contact white made from 12-yr old vines and fermtd in concrete vats w/ 15 days of skin contact...all the natural wine touchstone points. It was originally marketed as Ramidagallo from a nearby Sicilian village, but the name was shortened to just Rami to appease the Gallo law force.
