2012 Caves Duplessis Chablis Grand Cru Les Clos - France, Burgundy, Chablis, Chablis Grand Cru (5/17/2019)
From magnum, and served with butter poached oysters with caviar.

What I wouldn’t give for a few more magnums of this wine. From the seashell and citrus zest aromatics, through to the steely yet also palate filling finish, this was a delicious, entrancing wine. The food match was perfect, a “plus two” as both the wine and food were even better for the paring. There was a bit left after dinner, and several of us had another small glass. The extra air (three hours) made the wine even better, making us wish for more oysters. Magical stuff.

I'm envious. I think the Dork group is going to do Chablis next month. Will be the first time I spend a whole evening drinking nothing but Chablis, and I can't wait.
