Bérêche et Fils NV Champagne, "Campania Remensis." The back label appears to indicate this is from a 2012 base, disgorged March 2016; I think it's a blend of Pinot Noir and Chardonnay. Light brassy pink color, delicate mousse. Really bright and vibrant, with a mixture of herbaceous red fruit, yeast, and minerality. Remarkable for the length of the palate. Quite delicious!
We drank this (from standard white wine stems, not flutes) before dinner, with some cheese (including the Humboldt Fog "Purple Haze," which swaps out the ash layer for a layer of lavender and fennel pollen, and will make the heart sing of anyone who has spent time on a California hillside), and during a simple dinner for two: roast butterflied chicken with rosemary, lemon, garlic, and peperoncini; celeriac-potato puree; and a green salad with pears.
