More and more, I consider Ledoyen, the three stars restaurant of Christian Le Squer as one of the greatest tables in Paris.
We went for lunch with my wife, as I wanted to test some dishes before a dinner that I will make on Thursday.
My wife took an eel, and I took a langoustine which I consider as one of the greatest made by a chef. Then my wife took urchins prepared with avocado cream, and I took the eel, but with another preparation.
When we arrived, Géraud, the sommelier, offered is the aperitif, and I took a glass of Henriot, Cuvée des Enchanteleurs 1995, obviously a great champagne.
When Géraud asked me what I would like to drink, I said that I wanted to drink champagne, as it can be digested better. I had a rapid look on the wine list, and the answer was obvious : Salon 1982.
This is champagne ! I have spent one day by Dom Pérignon and I have loved the old ones that were offered to me.
Salon 1982 is on another planet. Completely different. And no comparison is necessary.
This champagne talks to me.
It has such a strong personality.
What struck me is that Géraud had, to describe this wine, completely different words from the ones that I would have used. So, I did not insist.
For me, Salon 1982 is a warrior. It is a Gengis Kahn, it is a Attila which conquers your heart. And I must say that this virile champagne ful of charm is appropriate to the cook of Christian which is full of personality and would not cope easily with many wines.
I adored the cook, and I am completely under the charm of this Salon 1982 which is of the highest temperament : a champagne which talks to me.
