Just finished the last glass with lunch from a bottle that I opened a few days ago. When it was first opened there was a hard edge, and it was not showing much. It took about an hour of air for the wine to come out and play. When it did on the first night there was all sorts of spice, earth and herb to go along with the deep cherry fruit. The interplay of rich fruit and savory elements was enthralling. I managed to leave some of the wine for a later taste, and finally got back to it with some leftover pizza today. It was showing a bit more of its acid, but all the savory nuances were still there, and it matched up quite well. Nicely done Larry.
