NV Pierre Péters Champagne Blanc de Blancs Brut Cuvée de Réserve - France, Champagne (12/26/2016)

Early days for this edition of what is for me the benchmark NV Blanc de Blancs, but there is a ton of pleasure and even more promise in this version. Not shocking, but it was very tightly wound when first opened, showing little more than laser focused acidity and chalky, lemon citrus aromatics. Twenty minutes later it was a different wine, with intense white floral aromas, and increased palate depth while maintaining the precision from the initial taste. It had fantastic depth, without any sense of heaviness, racing across the palate, and leaving a mark where it passed. Brilliant!
