Chilling wine in the refrigerator

I have a bottle of Chablis that was at room temperature (about 70 F.) I just put it in the refrigerator to chill. How long should it take to reach serving temperature?

Hi Jane, I'd give it about 1/2 hour in the lowest part of your fridge.

Being a terrible person, I put it in the freezer for about 15 minutes. I wouldn't worry too much. If you overshoot, it will come back up to perfect temperature in your glass.

I try really hard not to forget the bottle in the freezer, though!

Yep, 15-20 minutes in the freezer. Fridge will be closer to an hour...at least. The 0th law of thermodynamics is powerful, but not magical.

It was about an hour before dinner was ready so wine was nicely chilled by then. Thanks for the recommendations. I considered the freezer but don't have much space therein and also worry about forgetting the bottle (less likely to forget it in this case since the wine was intended for tonight's dinner.)

In winter my passive cellar is about 50 F , so no real issues (other than bringing up reds in time). In summer probably 65+, if I don't bring something up in advance I might use freezer- I just set an oven timer so I know I can't forget. But if you are in a hurry and don't want to forget bottle in freezer, an ice bath is faster than freezer (just a few cubes and water in a pitcher or something)

What temperature do you have in that part of your fridge? With mine it would need at least two hours down from room temperature to about 11-12°C.

Another quick cooling method is to use a wine cooler sleeve and place the bottle upside down in a wine bucket. This ensures that the wine in the neck of the bottle is cool. More than one sleeve might be required for such a big cooling.

If I'm having white with dinner I stick the bottle in the fridge when I remember. Once its cold it doesn't get any colder. If in a hurry I put it in an ince-cold chiller sleeve and place it in the freezer.
