We had the Drouhin-Vaudon (Domaine de Vaudon) 2012 with it:
Fresh squeezed lemon on the nose; clean, bright, piercing acidity, cutting like a scalpel; briny richness; and a magnificent unfolding of layers of flavor, finishing with the slightest touch of bergamot. The 2012 is still an infant, mind you, and has either a bit of baby fat or possesses an inherent richness and body from the vintage. Good drinking now, but don’t be afraid to sit on it for some years to come.
Nell's Smoked Lobster
Even more impressive, the Drouhin-Vaudon accommodated the smoked lobster with surpassing ease. The lobster was its own work of art, oh so delicately smoked, buttery and sweet, and the Chablis played counterfoil, never disappearing but never overwhelming, refreshing the palate and allowing the richness of the smoke-kissed lobster to shine with each bite.
