I am looking for a rich, Pinot dominant Champagne that has pretty wide availability. Non-vintage or vintage.
Any recommendation would be great.

Bollinger Special Cuvee is the easiest one to get that hits the mark.
Grower wines with reasonable availability include Billiot Brut Reserve and Aubry Brut.
The Bolly is probably what you want though.

David - thank you. I've hired a chef to prep a dinner for 10 for Liz's birthday and I'm doing the parings for the menu that's been proposed.

Are the diners fans of Pinot dominated Champagnes, because that dish sounds more like a Blanc de Blancs pairing.

It's unclear to me how many in the small group know the difference between Champagne and Prosecco. I think I'll go with the Bollinger at ~60% PN.
