Pairing Question. 5 Points

by Dan Smothergill » Mon May 04, 2015 6:57 pm

A Redd Brand Syrah from Washington went perfectly with raspberries and with salty pita chips. With mango or vichyssoise it was awful. Explain.

Washington syrahs have a core of raspberry fruit, so that somehow blended in where the tropical contrast of the more acidic mango could not. Salty chips would have heightened the fruit in the wine. Vichysoisse--not sure why that would be awful, though it's not an intuitive match. I suspect the leek component made the wine taste bitter. The remaining items in a typical vichysoisse--butter, chicken broth, potatoes--would have been benign. Not a matchy-match, but harmless.

Nah. Just having fun. I agree with Jenise that the Vichysoisse issue makes little sense. How ripe/sweet was the mango?

5 points Jenise. That’s interesting about the raspberry core to Washington syrahs. The two really went well together. I would have said the wine cut through the saltiness of the chips, but I like the way you put it better. The mango needed something more citrussy, or maybe a bubbly. Someone suggested beer with vichysossie. With so many styles of beer around now that would be fun to track down!

No problem David. I like using the wonderful names of fallacies from a Jesuit logic course so many years ago, even if I’m no longer sure which one is appropriate.
