1997 Joh. Jos. Prüm Wehlener Sonnenuhr Riesling Auslese - Germany, Mosel Saar Ruwer (12/26/2014)
This was opened Christmas night but seemed old and subdued. So we corked it up and put it in the fridge. 24 hours later it was a completely different wine. The fruit had come out in all its tropical glory, and the acidity unfurled and evened out the balance of the wine. It was nothing like the pop and pour of 24 hours earlier. What had seemed a fully mature and fading wine became a wine that was drinking superbly and in no danger of decline.

Happy to see a JJ note. I too like to keep a glass or two for the next day..one can hopefully see quite a development.

Interesting notes - thanks, David. I have a handful of the 2007 of this wine and am wondering if I will have the patience to let them age enough to do them justice. Maybe open one up every 4-5 years? Or sit on all of them for 10+ more years and then start to visit them?

It is indeed interesting to read how well this one developed, the more so since I have some of the same wine (if the AP numbers are the same :? )! In my experience, it is quite rare for a wine to taste better the next day but that is perhaps because it is very rare that we fail to finish a bottle showing well at one sitting :D .

We only put this one back in the fridge because it did not show well day one.
