WTN: Christmas Eve wines

Traditional lobster crumble dinner with my folks on Christmas Eve. Three wines that showed very well accompanied the meal.

1996 Bollinger Grande Annee
Fully mature and delicious. Lots of toast as well as a lemony backbone that kept it very refreshing.

2008 Ramey Chardonnay Hyde Vineyard
Surprisingly high in acid, and so also quite refreshing. Not too oaky and finished very clean.

2010 Raveneau Montee de Tonnerre
Rich and precise at the same time. Shows more ripe fruit than I expected, but still utterly delicious.

Off to a great start there David! Not so ambitious here but just opened the 2004 Tulloch Botrytis Semillon which is screwcap and 350ml. First of 3 bottles I have in the cellar and great start with some fluffy chocolate cake. Nice caramel flavors, orange, dried fruits, raisins, yum! Should develope next hour or so eh.

Took daughter and granddaughter to a restaurant and had "blue steak tips with a glass of their most recently opened red. Received a very nice glass of a Pinot Noir or unknown origin. Merry Christmas.

There's no exact recipe, but it basically involves mixing lobster meat with Ritz (has to be Ritz) cracker crumbs, tons of melted butter, some Sherry (usually Manzanilla) and lemon juice. That mixture goes into a casserole dish and is baked at 375-400 degrees F until it is bubbling like a volcano.
