The finest example I have had to date of Macvin du Jura is by the esteemed couple Bénédicte & Stéphane Tissot from the Domaine André et Mireille Tissot. Their Macvin Blanc du Jura is made from Savagnin (note that is Savagnin, not Sauvignon) and Poulsard. It is fortified to 17%; essentially it is a blend of one-third eau-de-vie and two-thirds grape must. To maintain the exuberant fresh quality, it is not aged.

The result is both enchanting and resounding with incredible depth and breadth of aromas and flavors. The aroma and rich texture and natural sweetness of the grape juice are maintained, while the eau-de-vie arrests fermentation and provides a solid backbone of structure to the mix.

There is, at first, along with the impression of fresh juiciness, a clear and unmistakable explosion of yellow plums (known as Mirabelle plum), but after the initial blast a myriad of subtle aromas and flavors and textures emerge to tantalize and tease the palate.

It is both a sensory and an intellectual delight to catalogue and analyze the fascinating layers of flavor in the Domaine Tissot mistelle, and one marvels at the consanguinity of fresh fruit, confit de fruit (jam) and rich, meaty, verging on savory, dried fruit, with each hitting a different note at the same time. It’s like drinking in three dimensions of fruit!
