Notes from dinner at Manila's hottest table at the moment - Mecha Uma. Too bad I'm still having trouble posting pictures as the food was outstanding!

H. Billiot FilsChampagne Grand Cru Cuvée Laetitia NV - Quite bready. Perhaps a touch too much sweetness. Medium to full bodied. Ripe green apples, roasted nuts and candied ginger. Fleshy wine. Quirky style but I enjoyed it.

Vin d'Alsace Mittnacht Cuvée Gyutaku (forgot to note vintage) - Very light with a gentle sweetness. Pleasant but nothing special. Supposedly made specially for sushi.

Vieux Chateau Certan 1999 - Very dry. Dried herbs, blackberry and black currant. Soft tannins but still firm on the finish. Definitely needs more time or a proper decanting. Very elegant wine.
Three be the things I shall never attain:
Envy, content, and sufficient champagne.

The Laetitia is a very unique beast. It's also going through a bit of a transition period. Not sure when your bottle was disgorged, but there was a problem with the solera that forms a base of the cuvee, and so there were good and bad disgorgements for a while. Things are back on track now.
