Microbiological underpinnings for biodynamic practices

Levi Dalton's recentish I'll Drink to That Podcast interview with Michael Schmelzer, winemaker at Tuscany's Monte Bernardi, included what I found a fascinating aside on the scientific underpinnings for what seemingly bizarre biodynamic practices contribute (starting around minute 40).

Curious whether anyone could pass along resources, written or otherwise, that illuminate biodynamic practices from a scientific perspective. My usual suspects (Goode's Science of Wine and Goode & Harrop's Authentic Wine) don't really seem to go there.
