Tonight we celebrated Memorial Day with a rotisserie chicken with sauteed mushrooms, fresh creamed corn and peas. We started with a Cremant de Bourgogne from Trader Joe's (their blanc de noirs), with smoked salmon. You cannot go wrong with this pairing, regardless of where the wine is from (Champagne preferred). The dinner wine was the Laleur Piot '10 Pernand-Vergelesses, 1st Cru Les Fichots . This made for the culmination of a great wine weekend. The Laleur Piot P-V was on point and ready to go, after a 2 hour decant, though it opened up even more in the glass. Beautiful acidity defines this wine as it unfolds to show berries, cherries, and "sous bois". Don't hesitate to open a bottle, though it will last for 3-5 years, at least.
