Cocktail challenge

by Jim Cassidy » Sun Apr 13, 2014 4:32 pm

I'm not a cocktail drinker, almost always preferring wine or beer, but want to make some tonight for my wife and a friend. We are limited by the contents of the on-site liquor cabinet, as spirits are not available on Sunday in Utah. We have enough Barbarossa Spiced Rum and Bacardi Superior to make a couple cocktails each, along with enough Captain Morgan Parrot Bay Orange rum to render both drinkers immobile.

What should I mix? Need recipes before the run to the grocery store.

Extra points if the frozen peaches from our tree are included in the recipe.

TIA

Probably way late here, but what the heck.

An easy-to-make crowd pleaser is the Dark and Stormy, which is just rum, good ginger beer, and a squeeze of lime. I've not had it with spiced rum, but it would be worth trying that.

Have never had the orange rum, but do you think it would make a passable daiquiri? Just be careful with the balance of lime and simple syrup (I like 1-1/2 rum to 3/4 simple to 1/2 fresh lime juice) and shake rather than stir.
