Tattinger Prestige Rose Champagne

What should I cook to serve with this? I have read that Champagne is very versatile when it comes to matching with food, but I'd like to choose a dish that would complement this particular bottle. I'm willing to go with either an appetizer or main course.

I'm afraid I'm one of those who has only had Champagne for a toast on special occaisions...

Maguro, Sake, Toro, Chutoro, Otoro, Hokkigai, Ikura, Tobiko, Uni, Ankimo...

With a nice Rose, any of the above will make you a convert.
