Purchased when visiting Metrovino in Calgary last year and given a heads-up from the very reliable owner. $29 Cdn, 13.5% alc, good natural cork, 60 yr old vines, blend of Carignan, Syrah, Grenache, ten months oak casks, clay/chalk/peebly.
WTN: 2007 Chateau Etang des Colombes Bois des Dames.
Very dark intensity in color, no sign of age here. Nose was pretty closed even on day 2. Cherry, spice, hint of garrigue.
Initial entry thought was dry and more fragrant than I expected (also soft tannins and hint of ripe fruit) but with air this all changed on second day which I found quite surprising. I know a wine can evolve overnight but like this? Lot more depth of flavors but fragrant "disparu"! Cherry plum still obvious but think I preferred the original version on day 1.
