WTN: Hart Cellar Semi-Dry Cayuga 2011

by JuliaB » Sat Sep 29, 2012 12:57 am

Pale lemon yellow, lavender, citrus and..hmm sweat (?) on the nose. Crisp white apple slices, white fruit, and a hint of spice on the palate. Moderate acidity, but enough to linger on the finish for a pleasant reminder of the sip just swallowed. The problem with Hart wines like this is, once finished, one wants to run to the local wine purveyor and buy a bottle, or six ,more...alas, not to be.

The label says: 2011 Semi-dry Cayuga. Produced and bottled by Howie Hart. Grapes from Bruce Giles Vineyard, Niagara County, New York. 12%abv. 1.5% residual sugar.

Makes a lovely aperitif or nice accompaniment to a fruit salad. Howie is the first to introduce me to Cayuga, and he's made a believer of me!

Thanks Julia. Glad you liked it. I did make two additions to this wine. The first was about 15% Vidal to enhance the mouthfeel. The second was an addition of Riesling juice used to sweeten just before bottling. I'm quite pleased with the way it turned out.
Chico - Hey! This Bottle is empty!
Groucho - That's because it's dry Champagne.
