Wine glasses

by Jon Peterson » Mon Sep 10, 2012 7:11 am

I am familiar with the most common wine glasses from Reidel. I own glasses for white wine, and Riedel's Burgundy and Bordeaux glasses. I was surprised to learn last night that Chablis should be poured into the Burgundy glasses, the ones that I have always used exclusively for Pinot Noir; I've been using the smaller white wine glasses for all white wines. I know the wine police won't be showing up at my door and I know that Chablis is considered part of Burgundy, but should I be using the Burgundy glasses for Chablis?

Personally I use them for Fèvre, Raveneau and Dauvissat, but not for any other producers. Try the wine in two glasses side-by-side and see what you prefer.

I will, Fredrik; (now why didn't I think of that?).

By the way, my 23 year old son did spend July on Gotland island and absolutely loved his archaeological experience. He fell in love with Sweden wants very much to go back for an extended stay. I do believe he would like to live there.

Yes and if you are drinking Rhones or shiraz etc you should be using a Hermitage glass.

Jon, we drink most top-end chardonnays period, meaning all of Burgundy and top end west coast chardonnays, not just Chablis, out of the pinot glass. The finer the wine, the more flavor and in particular aromatics therefore involved, the more you appreciate the bigger bowl. Conversely, cheaper wines with less of the above and some imbalance toward fruit, alcohol or oak, usually benefit from the confinement of a narrower bowl.

This is quite interesting. I had never considered putting a white burgundy into a burgundy glass, but it sounds logical and I'll definitely try it. Recently I bought a sauvignon blanc / riesling glass almost as a joke. It has a thinner bowl than the normal white wine glass. We tried a young sauvignon blanc in both the new glass and the traditional white wine glass. We were astonished at how much better the wine was in the new sauvignon blanc glass. I guess you can't experiment enough with this stuff.

SO true. Glass shape and size really makes a difference. True story: once opened something really swampy, hated it, and put the bottle aside to pour on the azaleas (all leftover wine becomes 'food' for acid loving plants around here). Next day, went to attend to aforesaid pouring, but took a sample first. Still kind of 'euw' but there was something new and attractive in there too. Poured it into a glass and took a sample to my husband who was working in another room. Euw, he said, is that that wine we opened last night? Yeah, I told him, let me get you something else. So I moved the wine into a slightly larger glass and took that in. Oh this is better, he said, but I don't love it. Fine, so I went and put the wine into a big Bordeaux glass and took that one back to him. That one, he loved.

Some might find the following article by Mary Ewing-Mulligan from Palate Press interesting.
