WTN: Pinot and salmon, does it get any better than this?

by Tom N. » Sun Aug 05, 2012 7:30 pm

Clear ruby red. Rich black cherry nose with undertones of Chambord. Seductively smooth midpalate of rich cherry pie and raspberry sauce combined with mouth watering acidity and just enough tannic tingles to balance out the wine. Medium long luxurious finish of cherry preserves and smooth tannins. Beautifully balanced, great with food, and a really nice sipper.

With food: Delicious match with grilled Atlantic Salmon marinated in a balsamic vinaigrette. The salmon and pinot just integrated beautifully on my palate with both tasting better, but each still tasting delicious. Not bad with fresh sweet corn either.

Wine: Patricia Green 2009, Ribbon Ridge Estate Old Vines pinot noir. 13.5% abv

Sounds like at great meal Tom. I hope you don't suffer any ill effects from the Atlantic salmon.

Hi Carl,

This was farmed salmon (I prefer wild). We do have wild Atlantic Salmon running up the St. Mary's River right now. After being fished out in the early 1900s, the fishery has been reestablished. But, you have to catch it yourself. Nothing commercially available.

Sounds great....its been too many weeks since I had salmon and pinot noir....need to rectify that soon! I have an 06 Ribbon Ridge in the cellar....how much longer do you think your 09 could have gone?
Cheers!

That's what I surmised Tom. It is the Candian/American farmed salmon that is dangerous. Run a google check or contact me for details.

Hi Mike,

The 09 was pretty big for a pinot. I think it could easily go 2 to 3 more years. Beyond, that I am not sure. Of course, it depends on the individual vintage as to how long it will age. I had some for lunch today, today and it was still good.
