Sparkling wine is one of the great joys of life. It should never be kept only for the holidays. At the Roscoe house we pull it out for any occassion. Of course true champagne offers something that you can't quite get elsewhere, but the other great bubblies, be they the cremants of France. proseccos of Italy, cavas of Spain, or America's great sparling wines, are a treat to be served all the year long.

I drank sparklers all through the MLB playoffs, and even though the Tigers fell apart during the World Series, that bubbly was still durned good! I love 'em.

Madame Lily Bollinger when in London in 1961, a reporter asked her when she drank Champagne, she replied:
“I only drink Champagne when I’m happy-and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I am not hungry and drink it when I am. Otherwise, I never touch it-unless I’m thirsty.”

The French Embassy invites the public in for a tasting of French wines every year. The first year they did this an entire room was devoted to the wines of Champagne. My wife did not leave this room the entire night. From 6:00 t0 9:00 she stood and drank champagne. She got to know the guys from Vranken so well we were invited to the after-party at a Georgetown restaurant. The emassy tasting this year did not include as many champagnes and I was focusing on the Loire reds. My wife was out cherry-picking the sparlklers though, especially the champagnes. There is no substitute for champagne.
