An amazing wine to sit down with and explore over a couple of hours with a leisurely dinner. There's a sensation of incredibly bright and pure strawberry and cherry fruit with floral and green herbal accents initially, but with air it unravels and shows remarkable depth and nuance for a village wine as all sorts of savoury brothy and minerally elements emerge with bright acids underneath keeping it very precise and refreshing. Outstanding wine, and I hope that my other bottles show this well.

Nice to have a vintage that is open enough to enjoy at such a young age.

great note salil. in general, i think 2007 village level wines are very nice at the moment - while many may not reach the heights of this specific Pacalet, there are lots of elegant wines available at good prices.

I'm glad I went long on the CSW offer with those prices (this cost about $33, not unreasonable for a village wine in general and a stunningly good value for this level of quality). I don't see myself buying Pacalet again unless there's some serious price correction, after just seeing pricing on the 2010s at a few places. Yikes.
