Over the last few days we've had several tasty bottles of wine. Last night it was the '09 William Fevre Champs Royeaux Chablis with appetizers followed up with a very seviceable Billard Pere et Fils '08 Hautes-Cotes de Beaune with steelhead salmon, polenta and edema-me salad. The Billard was exactly where it should be for what it was. Will finish the bottle tomorrow night, and looking forward to it. This is what Burgundy is all about, correctness of place, and this is a perfect example of that concept. A step ahead of a Bourgogne, but nothing to write home about, that would be a good village wine.
Tonight it was a Drouhin '10 Laforet (Bourgogne) Blanc that was on point with Camembert w/crackers, olives and almonds. Then a braised lamb shank with home made whole wheat bread and an '02 Lynch-Moussas (Paulliac). The wine was pounding on it's chest, somewhere in the 92-94 point range and 12.5% ABV. I've followed this wine over the last few years and it is clearly coming into its own (passive cellar, 68 deg.). Looking forward to my last few bottles.
