WTN: 3 Italian Whites + 2 Vini Santi

More from the past couple of months. I'm really getting to like Vin Santo, with the slightly oxidative aspect combined with the sweetness.

2010 Azienda Agricola Vercesi del Castellazzo Pinot Nero Bianco Gugiarolo Oltrepò Pavese DOC
Pinot Noir from a single vineyard, vinified as a white wine. Medium-bodied, well balanced, elegant, and very mineral, with floral/tropical notes. Very good.

2009 Azienda Agricola Elisabetta Foradori Myrto IGT Vigneti delle Dolomiti Bianco
60% Sauvignon Blanc, 20% Manzoni Bianco, and 20% Pinot Blanc. Full-bodied, bone dry, almost chewy, with steely acidity. Very mineral, with a stony/gooseberry/lightly floral nose, and flavors of white peaches, grapefruit, wax, and turmeric.

2009 Azienda Agricola Bucci Verdicchio dei Castelli di Jesi DOC Classico Superiore
Light to medium-bodied, bone dry, well balanced, refreshing, with citrus, mineral, and apple notes. Very good.

2003 Agricola Le Fornaci Vin Santo di San Gimignano DOC
From 500 ml bottle. Most Vini Santi (correct plural?) are blends of just Trebbiano and Malvasia – this one is 50% Malvasia, 30% Trebbiano Toscano, and 20% Vernaccia di San Gimignano.
Nutty/oxidative nose. Moderately viscous, well balanced, smooth, with good underlying acidity; tastes of walnuts, caramel, coffee, and burnt sugar. Good length on the finish. Very good/excellent.

2003 Conte Ferdinando Gucciardini Castello di Poppiano Vin Santo del Chianti DOC Colli Fiorentini “della Torre Grande”
From 500 ml bottle. Unusually, this is entirely made from Malvasia, with no Trebbiano.
Lightly viscous, moderately oxidative, well balanced, with good underlying acidity. Displays notes of caramel, pralines, honey, and coffee. Very good/excellent. Price not recorded. (This producer is not to be confused with Tenute Guicciardini Strozzi, which owns multiple Tuscan properties.)

Vini Santi (correct plural?)

Not sure. The format of vin santo doesn't match modern Italian which would be vino santo. The santo is an adjective of the vin part, so would normally take the plural the same as the noun.

So I reckon it's either your suggestion (vini santi) or vin santi.

p.s. One common (and easy) mistake is to pluralise place names e.g. Barolo - Barolo; Barbaresco - Barbareschi, as although they describe a type of wine (in the same way as santo), place names are always invariable.
