A little reluctant on opening. Fortunately it was a couple of hours before dinner, because it just kept getting better and better! Very, very long and even, with red fruit and no heat or tannin. Just a little of the softness of age, but no muting of the fruit.
A wine like this is never wasted, but pork chop “charcuterie” with mustard and capers, fried potato and green salad, didn't let it show its best.
Last night, with chicken sauteed with a tarragon cream sauce, cappellini and crookneck squash, it really sang. Tonight, the third night, with Canevari's "old fashioned" ravioli, it was fine, but the charm was fading.
As I sipped it while waiting for the water to boil, I was thinking that it was one of the very best PNs I have ever had, and one of the half a dozen best wines of any kind. When I truly like a wine, my mind fails to find descriptors. Sorry! I paid what I consider top dollar for this bottle, and it was worth every penny.
