The last bottle of '03 Talbot opened about a year ago was somewhat disjointed and never seemed to realize its destiny. Following the advice of a "Cellar Tracker" poster I opened, for Labor Day, my last '03 Chateau Talbot, St. Julien, and it was as advertised, deep, dark and delicious. A two hour decant set things up for the food pairing, grilled lamb chops, mashed potatoes and asparagus. A golden beet salad was nice with a Rioja white ('10 Monte Clavijo) from 100% Viura, but the guest of honor was the Talbot. If I had to rate this one, it would be 92-93 points, drinking nicely now if you like a full-throttle St. Julien, but should be nice for 4-5 more years.
