N.V. Gaston Chiquet Champagne Carte Verte Brut
Disgorged in 2005, this is still showing very well, with toasty nuances added to the ripe apple and light cherry fruit. There's a hint of nuttiness that comes in on the end that adds complexity, and the acidity is very cleansing. All in all a ery refreshing, drinkable Champagne that has done quite well over the 5 years in the cellar, consistently gaining depth while not sacrificing freshness.
In the "times have changed" department, this was under $25 on release. It now runs in the low $40s.
