Prosecco on tap

by Jon Peterson » Wed Jul 06, 2011 11:37 am

Liz and I went into Mike Isabella's new restaurant last week. It had only been opened three days and there were some serious bartending issues that needed to be worked out, and by now I'm sure they are/were. What I was most surprised to see was prosecco on tap, right next to the beer taps. I had never seen this. I did not ask who the vintner was but it was very good. It seems to me that the same benefits that beer on tap has over cans or bottles, namely freshness, would hold true for prosecco and it sure was apparent in that which we drank. This was sort of novel to me - anyone else ever seen prosecco on tap?

No. But I can imagine that the same drawbacks that beer on tap has over cans or bottles, namely freshness, would hold true for prosecco or any wine.

I agree that in an ideal world, beer from the tap is great. But that ideal world is very hard to find. Even harder than a bar with a good wine/beer list.

Regardless, sounds like an interesting place.

Yes, its standard in northern Italy, selling Prosecco by the glass or jug from a tap on the counter just like beer.

I was dubious, assuming that CO2 was injected at the point of sale, and since a bottle was not expensive after a few jugs we then plumped for a bottle at lunchtime.

I am not sure if this will continue since the recent major DOC and EU changes regarding Prosecco. I have a feeling that it may be sold only in bottle now.
