I was gifted a bottle the of Drappier NV Rose' and was a little suspicious due to the color. It was almost a Bourbon color. Thinking it was too old, we opened it as a pairing with grilled shrimp, pineapple, red pepper and bread. Wrong, it was superb. My only guess was that they used a little aged red to color the wine. Regardless, it was excellent, and perfect with the dish, don't let the color fool you. We followed this with a Caesar's salad with chicken, paired with an Bouchard Pere & Fils '05 Beaune de Chateau 1st Cru Rouge. Checking in with this (a little over 1/2 case remaining) and it was very nice, thought I think it will continue to improve over the next 2-5 years. My experience with Burgundy is not extensive as with Bordeaux, but this is a classic Cote de Beaune 1st.
