Questions for the Riesling experts

I don't see Auslese very often on the here so when I spied the last bottle of this at Duck and Decanter, I grabbed it. However, I'm an Auslese virgin so I thought I'd get more info here.

Joh. Jos. Prüm 2003 Graacher Himmelreich

When should I drink this and what should I expect from it? Should I drink this on it's own or are there some good food/dessert pairings?

I bought almost a case of this about 4 years ago, and have had one bottle so far. My brief and unconvinced note:

"7/28/2007: Quite sweet, whiff of sulfur not intrusive, less acid than I'd like but must be some to keep it from cloying. Some mineral. We'll see how it develops."

But it is Prum, and I'm sure it's good.
I think you could drink it now (and I should really taste another too, so thanks), and I'd suggest it on its own after Sunday brunch on a nice spring day. Would also be good with yellow cheeses.

Doug,

I have had many Prum Auslese over the years and they have yet to disappoint. I do have one 2003 Prum GH Aus, but I am saving it until 2013. I'm sure that David will have a note. JJ Prum seems to be about as close to "can't miss" as any winemaker out there.

Agree Sam. Hence the reason I bought those even though 2003.
Prum Auslese's are the biggest segment of my cellar.

Unfortunately I do not have a relevant note. I will say that I adored the 2003 Prum Bernkasteler Badstube Auslese shortly afetr release. All of the '03 Prums shut down hard shortly thereafter, and I have kept my hands off of them. I did buy a good bit of '03 Prum Auslese, so at least my money is where my mouth is.

J. J. Prüm's last for ages, and are heavily dosed with sulphur to last the long haul too (and therefore a bit of a waste to open young - not just because of the infanticide/lack of development but because they're also so sulphurous when young). The 2003 vintage was relatively hot and perhaps, as Charles noted, suffers an atypcally low acidity because of it. Nevertheless, I'd say it's worth waiting many years before opening that wine.
