Laura returned home from a 2 week business trip late Friday night, so once she managed to get some rest we decided that a nice bottle of Champagne was in order. To accompany the NCAA Tournament selection show (and a southern chicken and rice dish) we drank the H. Billiot Fils Champagne Cuvée Laetitia (NV). Billiot uses a solera-type system in creating this wine, and there tends to be more of a mature character in the wine, even with new dsigorgements (which this was not - disgorged in fall 2006). I'm always surprised by the grapiness that this wine shows despite it having a nutty, toasty character as well. It's a fascinating blend of youth and age that melds very well with a long cooked dish - richness matching richness. I see no reason to drink up this disgorgement any time soon, but there's no harm in opening it now - in fact it's very enjoyable!
