sur lie. A glass ($6.50) at Vin Rouge, Durham with six Escargots. $16.50 by the carafe. $25 a bottle. Not much color. Lemon and saline notes. Pure tasting. Medium length to long finish. Ideal food wine for shellfish and not completely overpowered by the garlic on the Escargots dish. Vin Rouge (informal French bistro) does well on their wines by the glass list.

I can't imagine white wine with escargot. To me this is red wine territory, Red Burgundy is an obvious choice, but since I served a Cru Beaujolais with the snails I have been hooked. It seems to be the perfect level of everything, both meat and wine. Try it, and if you don't like it, I'll come help finish the bottle, just save me a few escargot. Now is a great time to experiment with the '09 Crus being so nice.

I like your suggestion, Richard. I'm fond of both Burgundies and Beaujolais Cru. Will try that combo next time I ordered Escargots. I just picked up four of the '09 Beaujolais Cru--two Fleuries, a Cote de Brouilly and a Chiroubles. May be stocking more in the next couple months.
