Very nice piece. The part about not inoculating caught my eye. Very few of the Loire wineries we visited actually inoculate. As it happened too, my Riesling, Gewurztraminer and Steuben all began fermenting on their own before I could pick them up this year. Doing it the Steve Edmunds-Loire way, I expect my wines will turn out to be just as good as theirs :D .

Howie Hart, who got me the Steuben, tells me it was inoculated with EC-1118. He probably told me that before too, but I forgot.
