Good, question, it is Bouchard Pere & Fils. I will not comment of the other, limited experience. The key to these wines, as I am discovering, is time. They need about a year to soften, depending on the vintage, and the transformation is dramatic. I have been studying Burgundy now for about 5 years and am just starting to understand the protocol. I have given up on a lot of potentially nice wine, or opened too soon to really appreciate the developmental potential. Based on my experience with Bouchard Bourgogne over the past few years, I just ordered a case of the '07 to start the process anew. Let's hope it works. I'll report back.
