Hiraizumi Splashing Spring Water Tokubetsu Junmai Yamahai (Akita)
Imp: Japan Prestige Sake
SMV: +4
Acidity: 1.9
Rice: Miyama Nishiki polished to 58%
Yeast: #7
Date: 12/08
Incredibly creamy textured sake with flavors of rice pudding, dairy, milk chocolate, and raw peeled almonds. This sake gives a big whap of flavor in the front of my mouth, a slight perception of sweetness, then lingers for 5-10 seconds, and vanishes with a dry breeze. No acidic presence to speak of really but it feels nicely balanced. The only "splashing spring water" this could possibly represent is something wending its way through the Wonka Chocolate Factory. I'm definitely enjoying this although I was looking for more funkiness, this being yamahai and all.

N.V. Pierre Peters Champagne Blanc de Blancs Brut (Le Mesnil Sur Oger) L012007 Extremely bright, clean and refreshing. Fairly aggressive bead. Green apple, a squirt of lemon, some orange blossom and a cleansing tart finish. Lovely.
