I was at CAV last night for an appointment and David Ong, one of the restaurant's owners was at the next table meeting with his partners. He graciously sent over to me a glass of this sherry.

Dark amber. Dry and tart with a great deal of acidity keeping it fresh despite the nutty oxidation. There's a very subtle sweet/salty flavor in this wine. It's also got a bit of cheese to it. A little difficult to drink by itself but went very nicely with some chorizo fried with lots of garlic. Long, nutty and dry finish. I've had this wine before and didn't really like it but this is a much better, fresher example.
Three be the things I shall never attain:
Envy, content, and sufficient champagne.
